Today, many people mistake red velvet cake for being simply chocolate with red food coloring added in, but that wasn’t always the case. Red velvet cakes originally took on their distinctive hue due to a chemical reaction between raw cocoa powder and acidic ingredients such as vinegar or buttermilk that naturally caused its natural coloring.
This chemical reaction took place due to anthocyanins – pH-sensitive antioxidants present in raw cocoa powder that produce a reddish tint when mixed with acidic foods like buttermilk and vinegar.
At the height of World War II when baking items such as sugar and butter were restricted for use by bakers, some experimented by adding beet juice to their cakes to give them a redder hue while also helping keep their cakes moist.
Some cooks still opt for beet juice as an alternative to artificial dyes when creating recipes, especially when looking to avoid foods containing unnecessary additives. Red velvet cakes have also become increasingly popular during Juneteenth celebrations as their vibrant hue symbolizes freedom for African Americans who were once slaves.
